Backtagging: Absolutely! I am the monarch of slow tags, so consider any of my posts pretty much open forever.
Threadhopping: If it makes sense or would add to a conversation, but asking first is preferred. Grantaire himself is likely to interject if that's okay with people - it's just in his nature - but I won't do it without checking in.
Fourthwalling: Pups/characters are welcome to know that mine are fictional but please don't canonpuncture them without discussing this with me first.
Offensive subjects: I'm open to most offensive things, just would like to know first. I may tap out around systemic rape, or extreme acts of violence based on gender/sexuality expression.

Flirting with this character: By all means.
Fighting with this character: Sure, why not. Also, if there's anyone who's proficient in boxing or savate et canne, he may seek out a sparring buddy.
Injuring this character: Please ask me first, unless it's minor and assumed in the context of engaging with the thread (eg, a boxing match where they'll walk away with bruises).
Killing this character: Under no circumstances unless you talk it out with me thoroughly and there's a plot reason for it happening.
Using telepathy/mind reading abilities on this character: Mind reading is fine, please ask if you'd need to know anything. Nope to enforcing will on him without prior consent from me please.

Warnings: Grantaire drinks and uses drugs, and his addictive personality will certainly come up in threads. As a frequently-drunk person he may also get himself in dubiously-consenting situations - please let me know if this needs to not happen with your characters.

He's also dead on arrival, having just witnessed the horrific death of a lot of his friends, and will experience some PTSD at times -- generally nightmares, some flashbacks.
